Adrian Santos

Adrian Santos was born and raised in Manila, Philippines. His father came from a Filipino and Trinidadian family, bringing Caribbean spice and bold aromatics into the household. His mother is Spanish, introducing Adrian to seafood and sofrito. He eventually moved to New York City to pursue his culinary career. New York changed the way he thought about food. He discovered that NYC itself was a collection of cultures, neighborhoods, languages, kitchens, and late-night food traditions. Eventually Adrian realized that he didn't need to separate his influences. He could bring them together. MALANGA was born from that idea.
